We have such incredible diversity of vegetables in Africa, from ancient grains to more recent imports like the sweet potato and the chili pepper. In traditional African recipes, vegetables are most often cooked into stews and sauces. We will explore all kinds of ways to use them. African vegetables span a wide variety of the known and unknown. It’s not every day you get to discover a new vegetable, a green you haven’t tried before, or something you’ve never seen. Exciting stuff! We encourage you to support local vegetable sellers and buy from your community market. Get to know your food providers, and ask around to find farmers that continue to grow traditional organic food from their own seed. This is getting rarer and rarer, and it is more important than ever to make sure that our food money goes towards supporting the Earth’s precious biodiversity.
